However, health specialist Professor Tim Spector warns that by doing so, essential nutrients may be lost. Tim highlights that the skin of foods like apples, kiwis, and potatoes contains polyphenols, which are natural compounds with antioxidant properties that reduce inflammation and enhance the immune system.
Polyphenols found in plants have been associated with anti-ageing benefits and even anti-carcinogenic properties, according to scientists. Tim emphasized the importance of polyphenols in various aspects of health on his Channel 4 show. He explained that these compounds support the growth of beneficial microbes in the body, thus improving immunity and overall well-being.
The decision to peel or not to peel fruits and vegetables can significantly impact nutrient intake. Tim stressed that apple peels, for instance, contain up to 30 times more polyphenols than the flesh, while kiwi skin provides an extra 50% fiber. Keeping potato skins on can boost fiber content by five times. Even if peeling is necessary, Tim suggests repurposing the peels by baking them into natural crisps with olive oil and salt.
According to the NHS, the fiber in potato skins can help reduce the risk of heart disease, stroke, type 2 diabetes, and bowel cancer. Additionally, fiber-rich foods contribute to prolonged satiety, aiding in weight management. Tim also recommended swapping white rice for grains or beans for those aiming to lose weight, emphasizing the misconception around the healthiness of white rice.
For healthier snacking alternatives, Tim advised choosing fruit, dark chocolate, or nuts over sugary treats. Dark chocolate, in particular, has been praised by Tim for its potential to enhance gut health due to its polyphenol content. These compounds, also found in coffee, extra virgin olive oil, grapes, berries, peanuts, and red wine, act as a fuel for gut microbes, promoting overall digestive health and well-being.
